My Rainy Day Meatloaf and Brussels is enough to serve 6 people, and you’ll have some leftover for lunch the next day! 😍
For the meatloaf:
One package of ground pork and ground chuck combo (approx. 1½ lbs)
One carton of cherry tomatoes
4 garlic cloves minced
½ sweet onion chopped
3 tablespoons of mayo
½ bag of chopped spinach
Simply Heinz ketchup
Preheat oven to 375º. Mix together all ingredients (except ketchup) in a large mixing bowl and place in a loaf pan lined with olive oil. Bake for 30 minutes, then add ketchup to top and bake another 30 min. Total baking time = 1 hour.
For the Brussels sprouts:
One ½ sweet onion chopped
One bag of fresh Brussels sprouts—cut in half
Sprinkle the bottom of an 8 x 8 glass baking dish with olive oil. Add brussels and sweet onions, and bake for 30 minutes or until soft and edges are crisp. Add grated Parmesan cheese and bake another 5 to 10 minutes, or until cheese is golden brown.
