One thing I’ve learned from living with celiac disease is that I truly know what it means to eat healthy and live well. I now eat more vegetables, fruit, lean meats, eggs and fish than I ever have in my life.
I follow the 80/20 rule when it comes to gluten-free eating, but as much as I love to cook from scratch, I get busy or am sometimes not up for a big production and cleanup. Making my own salad dressing or grinding my own gluten free bread crumbs just isn’t a priority.
I’m not a big pantry person because most processed foods made for the shelf are full of added salt, sugar and other unhealthy ingredients, but I do have certain things on hand for the 20 percent of my 80/20 when I’m in the mood for quick n’ easy!
