Doug’s recipe for our Christmas morning skirt steak and scrambled eggs:
For the skirt steak
Sear skirt or hangar steak on both sides for 2-3 three minutes on high heat for a medium to medium-rare steak. Season with kosher salt or sea salt.
For the eggs
1. Scramble six eggs in a mixing bowl.
2. In an omelet or frying pan, add a tablespoon of butter—making sure the butter does not burn. Add eggs to the melted butter, then add Munster or Swiss cheese to taste, and cook on medium heat until done!
