What’s a delicious way to make an ordinary burger extraordinary… ? Add lots of sweet matchstick carrots! It makes a tasty, different kind of burger that’s perfect for a party. Or just a regular ‘ol lunch when your son pops in for a short visit and makes your (Mother’s) Day!
Maybe your kids aren’t that interested in eating their carrots, but when you add them to a burger it enhances the flavor of the burger, and gets those veggies into their diet. A great way to get your kiddos to eat healthier!
I made these gluten free matchstick carrot burgers this weekend and served with Mint Juleps for a fun Kentucky Derby-inspired party. The Mint Julep is the signature drink of the race. Serve it in a silver Julep cup for a traditional presentation.
Kentucky Derby Burgers or Matchstick Carrot Burgers
1 1/3 lbs ground Chuck
3/4 Parmesan cheese
1 cup corn chips, crushed
1 egg
1 cup matchstick carrots
Serve with a slice (or shredded) Sharp Cheddar on top
Mix together ground chuck, parmesan, corn chips, carrots and egg and form into burgers. Sauté in olive oil over medium-high heat and cook until golden brown—about 20 minutes.
For the Mint Julep
2 oz. Woodford Reserve Bourbon
1/2 oz. Simple Syrup
6 mint sprigs
Muddle 3-4 sprigs with simple syrup in a silver Julep cup. Remove the muddled mint after rubbing mint around cup walls and fill halfway with crushed ice. Add Bourbon. Fill with crushed ice and garnish with extra sprigs.
