Breakfast is my favorite meal of the day, and these 4 different Breakfast of Champions will certainly kick-start your day. Each one is gluten-free and low-carb / no carb and will give you LOTS of energy. You shouldn’t get hungry for at least 4 hours!
This first one is a Mexican scramble with eggs, sharp cheddar, sweet onion and hamburger in a crunchy corn tortilla… so just a ‘lil bit of carbs and a dollop of sour cream. Hearty!
This weekend I made my own version of Eggs Benny for the first time: Applewood bacon, eggs, sliced avocado (no bread or potatoes), and Hollandaise Sauce from scratch. It was a great Easter breakfast!
For the Hollandaise Sauce:
3 egg yolks
1 tablespoon fresh squeezed lemon
1 stick of cold butter using a ¼ cup at a time
You’ll need a whisk and a small sauce pan on very low heat. Continuously stir all ingredients until butter melts and eggs cook.
