Crab Cake Stuffed Portobellos

I pulled out an old standby Crab Cakes recipe and tried two new types of wine last week. The old with the new; all taste tested and passed with flying colors!

I painted my own gluten-free spin on an Old Bay classic and made these Crab Cake Stuffed Portobellos by adding chopped sweet onions and yellow mustard, and GF bread crumbs in place of bread. I also did not use Worcestershire sauce or baking powder.

Gluten Free Crab Cake “Stuffed” Portobellos

½ cup gluten free bread crumbs
1 tablespoon mayonnaise
1 tablespoon yellow mustard
1 tablespoon McCormick® Parsley Flakes
1 teaspoon Old Bay® Seasoning
1/4 teaspoon salt
1 egg beaten
Small amount of milk
1 pound lump crab meat
½ of a medium sized sweet onion, chopped

Directions:
1. Pour breadcrumbs into large mixing bowl. I estimated around a half cup of gluten free bread crumbs until it felt to be the right consistency.

2. Moisten with milk. Add mayonnaise, mustard and chopped onion; mix well. Add remaining ingredients; mix lightly.

3. Shape into 4 patties and refrigerate for 30 minutes to help keep the patties together when cooking. 

4. Broil or fry until golden-brown on both sides.

I grilled Portabello mushroom caps, placed the crab cakes on top, and sautéed fresh Brussels Sprouts for a magnificently deeeelicious accompaniment and an elegant and simple dinner!

My friend Ellen (who is fantastic at choosing wines that have beautiful flavor and keep us well) recommended one of her favorites: a 2014 Chappellet Mountain Cuvée and Invetro Renieri, a red blend of Sangiovese, Cabernet Sauvignon, and Merlot, which interestingly comes with a glass cork!

I thought the Chappellet paired well with the crab cakes and had a lovely flavor, so we saved the Invetro for a different day and paired it with Rosemary encrusted lamb chops.

I’m no sommelier, but this wine and food matching certainly worked for me!

I think the most important thing to mention is when you have celiac, you’re sometimes afraid to try new things because you’re feeling well and don’t want anything to interfere with a good thing! But if you trust a good friend to give you a few tips, it can make a big difference.
